Veggie Dip

My all time favorite veggie dip:

1/2 cup mayo
1/2 cup sour cream
2 Tbs dried minced onion
2 Tbs parsley flakes
1 tsp dill weed
1 tsp bon appetite

Healthy Guacamole

1 cup frozen, shelled edamame, thawed
1 ripe avocado, peeled and pitted
1/2 cup chopped cilantro
2 cloves garlic, minced
1/4 onion, chopped
juice of 1 lime
3 tablespoons of water
optional - 1/2 jalapeno finely chopped
Salt and pepper to taste

Blend in food processor or blender. Add a bit more water if it's too thick.

Thanksgiving cranberry sauce


1 package cranberries (12 oz)
1/3 c. orange juice
1 c. sugar
1 c. water
1/4 zest of lemon
1/2 zest of orange

Wash cranberries well. Combine water, sugar, cranberries, and orange juice in pot, bring to a boil. Turn down heat, simmer. Add zest of orange and lemon to put. Simmer on low for 30 min. Cool for one hour.

Queso Dip

This is my sister-in-law Kendra's recipe that I stole from her blog. I even stole the picture from it. I'm making it for our superbowl party tomorrow, so I'll let you know how it is.
Best Queso Dip:
1 8oz pkg. cream cheese (I used fat free - can you make this healthy?!)
1 8 oz carton sour cream
1 8oz pkg Velveeta
1 C shredded Monteray Jack Cheese
1 small can Rotelle Diced tomatoes with Chiles - use Mild unless you like HOT HOT
Cut cream cheese and velveeta in chunks and place in oven proof bowl or crock pot. Mix in the rest of the ing. Turn crock pot on low for three hours/high for one hour or bake at 350 for 20 minutes. Serve warm with tortilla chips.
