Pecan Crusted Salmon and Parmesan potatoes!
I just made this tonight and it was delicious!
Pecan Crusted Salmon:
4 salmon fillets(about 6 ounces each)
2 cups milk
1 cup finely chopped pecans
1/2 cup all-purpose flour
1/4 cup packed brown sugar
2 teaspons seasoned salt
2 teaspoons pepper
3 tablespoons vegetable oil
Preheat oven to 400 degrees.
Place salmon fillets in a large reusable plastic bag, add milk.
Seal bag and turn to coat. Let stand for 10 minutes. Meanwhile, in a shallow bowl, combine the pecans, flour, brown sugar, seasoned salt and pepper. Drain fish; coat with pecan mixture, gently pressing into the fish.
In a large skillet, brown salmon over medium-high heat in oil. Transfer to a baking pan coated with nonstick cooking spray. Bake at 400 for 8-10 minutes or until fish flakes easily with a fork.
Parmesan Potatoes:
4 medium red potatoes, thinly sliced
1 small onion, thinly sliced and separated into rings
3 tablespoons of butter, melted
1/3 cup grated parmesan cheese
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon garlic powder
Preheat oven to 450 degrees
Place half of the potatoes in a greased 2 quart baking dish. Top with onion and remaining potatoes; drizzle with butter. Sprinkle with Parmesan cheese, salt, pepper and garlic powder. Bake uncovered, at 45o for 25-30 minutes or until the potatoes are golden brown and tender.

Wreaths

Melt: 1 cube butter
34 large marshmallows

Remove from head and add:
1 tsp. vanilla
2 tsp. green food coloring
4 1/2 cups corn flakes

On parchment paper, form the mixture into wreaths and then add red hots to decorate.

I Like Turtles

1 pkg Rollos
1/2 pkg Pretzels
4 oz. whole pecans

Unwrap the Rollos and place on pretzels on a pan lined with wax or parchment paper. Stick pan in the oven, heated to 400 degrees, for about 1 or 2 minutes, until they are shiny. Pull out and smash down a pecan onto each one. Make about 50 pieces.

Sweet Chex Mix


1 cube butter (margarine won't work)
1 cup sugar
1 cup light corn syrup
1/2 t. vanilla
Mix all ingredients in saucepan and boil for 2 minutes. In a large bowl mis" 17 oz. Rice Chex, 1/2 bag coconut, 1 cup slivered almonds. Slowly pour syrup over mix, and stir until well coated.

Pumpkin Chocolate Chip Cookies

I got this recipe from mom. It is as easy as it gets:

1 small can pumpkin
1 spice cake mix
1 egg
chocolate chips

Stir together. Place golf ball sized balls on pan and bake for 10 min. at 350. Makes approximately 2 dozen cookies.

Mashed sweet and white potatoes

Ashley's sister-in-law, Emily, makes these. Just throw in a couple of sweet potatoes (peeled and cut up) into the water with your white potatoes when you are boiling them up. Mash and add lots of butter and a bit of salt. So easy a chimpanzee could do it! You don't even need gravy on top, they are very flavorful. And sweet potatoes have more nutrition than regular potatoes do, too!

One-Dish Chicken with Vegetables


1 envelope onion soup mix

1/2 tsp. garlic powder

1/4 c. olive oil

4 boneless skinless chicken breast halves

4 medium potatoes, cut into chunks

4 medium carrots, cut into slices


Preheat oven to 425.


In small bowl, combine the soup mix, garlic powder and oil. Spoon half into a large resealable plastic bag; add chicken. Seal bag and turn to coat. Spoon the remaining marinade into another large bag and add potatoes and carrots. Seal bag and turn to coat.

Arrange chicken and vegetables in a n ungreased 9 by 13 pan. Cover and bake for 15-20 minutes. Uncover, bake 15-20 more minutes or until chicken is done and veggies are tender.

Chicken Pot Pie

This is Jud's mom's recipe. I like it because you don't have to make a crust or waste all the thick parts of a nasty crust. And, it is super easy. And, Jud LOVES it, and so do I, and so does James.

Filling-
1 2/3 cup frozen veggies (carrots and peas- sometimes I add corn too)
1 cup cooked chicken
1 can cream chicken soup

Crust-
1 cup Bisquick
1/2 cup milk
1 egg

Mix filling ingredients in an 8 x 8 pan (a lot of times I double it and do a 9 x 13 for leftovers). Stir crust ingredients together and pour over filling. Bake at 400 for 30 min. until browned.

Egg Nog

I got this recipe from my sister-in-law Emily. I've only had it once, but it is DELISH!

1/3 cup sugar
2 egg yolks
1/4 tsp salt
4 cups milk
2 egg whites
3 Tbs sugar
1 tsp vanilla
1/2 cup whipping cream

Beat 1/3 cup sugar into yolks and stir in milk. Cook over medium heat stirring constantly until right before boiling. Remove from heat. Beat egg whites. Add 3 Tbs sugar. Beat until soft peaks form, add to milk and egg mixture. Add vanilla. Chill 3-4 hours. Serve in mugs- add dollop of whipping cream on top- this is a must. Cathy adds a few sprinkles of cinnamon and nutmeg which makes it even better!

Chicken Cordon Bleu Soup


With cooler weather coming, here is a recipe I made up. I actually tried to copy what I have tasted at Ye Lion's Den Restaurant in Ogden.

2 boneless, skinless chicken breasts, cooked and cut into cubes OR 1 can chicken
2 cans of chicken broth
1/2 cup flour
1 cup sour cream
1 can evaporated milk
3 cups milk
1 cup Swiss cheese
1 c. ham, diced

Heat the chicken broth in a large saucepan until it starts to boil. In a separate bowl mix the flour and the sour cream. Then gradually add heated broth to bowl, a half cup or so at a time, stirring with a whisk, until smooth and thin. (about a cup total broth). Then add that back to the rest of the broth in the saucepan. (This little trick keeps your soup very smooth, not lumpy) Return to a boil, but don't turn heat up to above medium , stirring constantly so it doesn't stick to the bottom of the pan. When it starts to thicken, add the can of milk and the other 3 cups of milk. Then don't cook above medium heat, but keep stirring until it thickens again. Turn off heat and add the cheese and ham. Stir until melted. Serve.

Waffle Cookies


Waffle cookies

We got this recipe from our friend Carly. We made them for our girls day the other day and they are so good! And way easy and fast.

1/2 margarine, melted
3/4 c sugar
2 eggs, beaten
1 t vanilla
3 T cocoa
1 c flour
1/4 t salt

Mix together. Place one heaping tablespoon in each section of a hot waffle iron. Cook for approximately 1 minute. Remove with fork. Cover with cream cheese or chocolate frosting. Makes 16 cookies.

Yummy Chicken Casserole

I got this recipe from my friend Kelly in nursing school. It's way good, but I haven't made it in a while because we don't have an oven. So there will be no picture of this one, you'll just have to take my word for it on how good it is.

1 can cream of chicken soup
1 large can or 2 small cans of chicken (or 2 cooked, cut-up chicken breasts)
1 8 oz tub of sour cream
1/2 package of wide egg noodles
1 package of stove-top stuffing
1/2 cup butter (1 stick)
dried onions (add to desired taste)
parsley (same as onions)

Preheat oven to 350 degrees.
Boil noodles according to directions on package. Drain and put in a big bowl. Mix in cream of chicken soup, sour cream, chicken, dried onions, and parsley. Put mix in a casserole dish.
Melt butter in pan, mix in package of stove top stuffing and heat for about 2-3 minutes. Remove stove top from pan and sprinkle on top of the mix in the casserole dish. Cover with foil and bake for 25 minutes. Then take the foil off and bake for about 5 more minutes. Enjoy!

2. It has to be easy.
3. Try to include a mouth watering picture :)

I also think it would be fun to post our weekly menus. Then we can copy each other and ask for recipes if we don't have them. Also, I set it up to have labels on the side. When you are posting, before you hit "publish post" put in a label in the sidebar (ex: chicken, pork) and that way when we are looking for a recipe, it will be easy to find. Happy recipe posting :)

Yummy Pork Chops

4 pork loin chops, 1/2 inch thick
3 tablespoons soy sauce
3 tablespoons ketchup
2 teaspoons honey

Heat oven to 350.
Place pork in ungreased square baking dish.
Mix ingredients and pour over pork.
Cover and bake about 45 minutes or until pork is slightly pink in center.
Uncover and bake 5 minutes longer.

Quick Chicken Risotto

1/2 lb skinless boneless chicken breast halves, cut into 1/2 in. pieces
1 can chicken broth
1 cup uncooked regular medium or long grain rice
1/2 lb asparagus, cut into 1 1/2 in. pieces
1/4 lb fully cooked ham, diced (you can buy small packages of already diced ham in the meat section that are pretty cheap)
1/4 teaspoon dried basil leaves
1/4 cup shredded Parmesan cheese

Spray 12-inch nonstick skillet with nonstick cooking spray; heat over medium-high heat. Cook chicken in skillet 3 to 5 minutes, stirring frequently, until light brown.

Stir in broth; heat to boiling. Stir in rice; reduce heat to low. Cover and simmer 10 minutes without stirring.

Stir in asparagus, ham and basil. Cover and simmer without stirring 8 to 10 minutes or until chicken is no longer pink in center and rice is tender; remove from heat. Stir in cheese.
